3 ways to go Greek. 

I love love LOVE Greek yogurt. It might be one of my favorite things EVER. I think it makes the perfect breakfast or snack because it is protein packed. Here are my 3 favorite ways to jazz it up...

i'm full.

I had to dedicate a post to pancakes.

After all, it is their day.

Thus, my excuse to have them for dinner (2nd time in 3 days...)

It also means I need to go to the grocery store, ASAP. 

 

If you couldn't tell by this pic, my pancakes are more "cake" than "pan." I can't seem to make them like IHOP. But I'm ok with it, contrary to what my professors think, "fluff" is good. 

ps: My pancake party also had sparkling OJ, since we celebrated at 8pm not am.

pb bars

Peanut Butter Bars. Why hasn't this been done before? Forget the tipsy, could you imagine a bar with several kinds of PB concoctions? It'd be like Vegas...but better.

Anyways, I created a PB BAR. It's good time.

pumpkin crunch2Munch. 

i like crunch and crunches. 

Thus, it was only natural to make this cereal/snack/topping...whatever you may call it, because of the major crunch factor and pumpkin flavor. I attempted it twice. Round 1, was a fail after trying to cook it to the perfect crispness/getting distracted by company. Persistence wins (in everything) because Round 2 is like Fall in a bowl, or a bag (figuratively...due to risk of suffocation.)

apple muffins. 

getting dressed today, i really wanted to wear my apple bottom jeans, boots with the fur. 

but it's not Saturday night.

so i made these. 

Not to mention, I had an abundance of apples from my friend's tree. Just call me Eve. 

{Supplies} Oven, stove, muffin tins, saucepan, large bowl

{Ingredients}

1 cup water

2 cups sugar

2 cups grated apples

1 cup of peanut butter

1 cup (2 sticks) butter or earth-balance butter

2 teaspoons ground cinnamon

2 teaspoons freshly grated nutmeg

1 cup chopped walnuts

2 teaspoons baking soda

31/2 cups all-purpose flour

{Steps}

Preheat oven at 350 degrees 

Combine the water, sugar, apples, butter, cinnamon, nutmeg, and peanut butter in a saucepan; bring to a boil. Remove the pan from the heat and cool completely (this is important to make the mixing easier)

In a large bowl, stir the nuts and baking soda into the flour. Add the cooled mixture to the bowl, and stir until blended. Fill greased muffin tins with batter to the top. Sprinkle with brown sugar (optional.) Bake for 15 minutes (or until golden brown)

Note: Extra muffins can be stored in the freezer

strawberry oat bars. 

I stumbled across these strawberry oat bars in a magazine I bought at the airport. Well, this meant that I was left the whole trip craving the strawberry goodness that the pictures in the magazine offered. Once I returned back to my early 90's kitchen, I whipped up these for breakfast. They were a nice little switch from the "usual" breakfast blah that I am sometimes guilty of. 

{supplies} food processor, 9x5 inch loaf pan

{ingredients} 1.5 cups pitted dates, 1/4 cup raw macadamia nuts, 2 tbsp old fashioned rolled oats, pinch of sea salt, 1 cup of strawberries, hulled and thinly sliced. 

 1. Pulse dates, nuts, oats, and salt in a food processor until combined. 

2. Press the date mixture into the bottom of a 9x5 loaf pan. 

3. Mash half of the strawberries (the food processor makes this easy) and spread them on top of the date mixture. Top with the remaining strawberries. Slice into rectangles. 

{makes about 6. raw/vegetarian/vegan}
