pb and fluff are more like it. 

seriously, this might be one of my favorite things ever everrrr. and i had a hue.mun.go. craving for it today. 

so i made it. and ate it.

i'm full.

I had to dedicate a post to pancakes.

After all, it is their day.

Thus, my excuse to have them for dinner (2nd time in 3 days...)

It also means I need to go to the grocery store, ASAP. 

 

If you couldn't tell by this pic, my pancakes are more "cake" than "pan." I can't seem to make them like IHOP. But I'm ok with it, contrary to what my professors think, "fluff" is good. 

ps: My pancake party also had sparkling OJ, since we celebrated at 8pm not am.

baked zucchini & tomato soup.

Thanks to Pinterest, I have been drooling over the recipes. Although all the baked goods look fab, I couldn't help myself from making this more New Years "resolution friendly" recipe and pairing it with tomato soup. My goodness, it was delicious!

game night. 

Game night, just like the commercials...but better.

Last night a few of my friends who know everything about me from my dears to my fears came on over to channel a little competitive spirit outside the pool, catch up on life, and enjoy some dindin. 

Win.

I had tons of veggies just waiting to be devoured out of fear of abandonment over the holiday. Throw them on pizzas and KAPOW!

{vegan} black bean pizza

Black Bean Pizza: protein packed, healthy, quick, delicious, and simple!

What more could you ask for?

So good, I made it twice in 3 days. 

{Ingredients} 

3/4 cup tomato sauce, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon thyme, 1 large pizza crust (I just used a pre-made/whole wheat one from the bread aisle), 1 can black beans (drained), 1 cup frozen corn kernels (thawed), 1 onion chopped (optional), 1/2 cup salsa

{Steps} 

Preheat the oven to 450 degrees. 

Combine the tomato sauce, cumin, garlic powder, and thyme. Spread over the pizza crust. Combine the black beans, corn, onions, and salsa. Spoon evenly over the pizza crust on top of the tomato sauce. Bake for 10 to 12 minutes, until the crust in golden. YUM! 

optional: pair with Mexican hot chocolate cookies

I love pizza. Like love. Like love LOVE. 

When I don't feel like using my stone pizza oven or whipping up some dough from scratch, and hand making my own tomato sauce [insert sarcasm here] i do this.

Take a frozen pizza, perfectly good in it's own right and make it BETTER.  

way better. 

1. Choose a pizza that suits your fancy. I got this tasty veggie one from Trader Joes! Nom. 

2. It looked lacking in its frozen state. 

3. Being an athlete, I'm always searching for new ways to make things healthier and more nutritious. I took the veggies I had in the fridge (zucchini and peppers) and took a risk by adding some black beans as well, just to give it an extra kick of protein! To my surprise, they were a great addition! 

4. I baked it as usual :) 

Taaadaaa. {Custom} Pizza Perfection! 

Other ideas for additional toppings: mushrooms, onions, peppers, tomatoes, basil, garlic, spinach, sun-dried tomatoes, roasted eggplant, olives, artichoke hearts, avocado, rosemary
