peppermint fudge 

Peppermint fudge, more commonly known as "Epic Fail Fudge"

EPIC because it is delicious. FAIL because i couldn't get it out of the pan. Oh well, I guess it's all mine now to devour. muahahahaha

Anyways, it's a quite simple and delicious recipe inspired by holidays when I was little and my cousins would make the most delicious fudge for family gatherings. Which gets me thinking, damn, i miss being a youngster.

Supplies 

bowl, pan, tin foil, fork, freezer 

Ingredients 

1.5 cups of extra virgin coconut oil, melted

1 cup of maple syrup 

1.5 cups of cacao powder 

.5 cups crushed peppermint/candy canes 

Steps 

Combine ingredients and mix in a bowl with a fork. LINE PAN WITH TIN FOIL OR PARCHMENT PAPER. Pour fudge into pan, so it is about 1 inch thick, sprinkle extra peppermint on top. Stick in freezer. Patiently wait. Serve frozen.

sorbet. 

3X a charm. 

This is my 3rd berry recipe in a row. But for a good reason (and because clearly, I have an obsession.)

So now, without further ado, I introduce you to the easiest recipe ever....

{Supplies} food processor

{Ingredients} 3 bananas, peeled and frozen, 1 cup frozen berries  

{Steps} Puree ingredients in a food processor until smooth. Serve immediately. 

{ps} I topped it with agave nectar and my really easy homemade granola. Delish!

strawberry oat bars. 

I stumbled across these strawberry oat bars in a magazine I bought at the airport. Well, this meant that I was left the whole trip craving the strawberry goodness that the pictures in the magazine offered. Once I returned back to my early 90's kitchen, I whipped up these for breakfast. They were a nice little switch from the "usual" breakfast blah that I am sometimes guilty of. 

{supplies} food processor, 9x5 inch loaf pan

{ingredients} 1.5 cups pitted dates, 1/4 cup raw macadamia nuts, 2 tbsp old fashioned rolled oats, pinch of sea salt, 1 cup of strawberries, hulled and thinly sliced. 

 1. Pulse dates, nuts, oats, and salt in a food processor until combined. 

2. Press the date mixture into the bottom of a 9x5 loaf pan. 

3. Mash half of the strawberries (the food processor makes this easy) and spread them on top of the date mixture. Top with the remaining strawberries. Slice into rectangles. 

{makes about 6. raw/vegetarian/vegan}
