peppermint fudge 

Peppermint fudge, more commonly known as "Epic Fail Fudge"

EPIC because it is delicious. FAIL because i couldn't get it out of the pan. Oh well, I guess it's all mine now to devour. muahahahaha

Anyways, it's a quite simple and delicious recipe inspired by holidays when I was little and my cousins would make the most delicious fudge for family gatherings. Which gets me thinking, damn, i miss being a youngster.

Supplies 

bowl, pan, tin foil, fork, freezer 

Ingredients 

1.5 cups of extra virgin coconut oil, melted

1 cup of maple syrup 

1.5 cups of cacao powder 

.5 cups crushed peppermint/candy canes 

Steps 

Combine ingredients and mix in a bowl with a fork. LINE PAN WITH TIN FOIL OR PARCHMENT PAPER. Pour fudge into pan, so it is about 1 inch thick, sprinkle extra peppermint on top. Stick in freezer. Patiently wait. Serve frozen.

Tomorrow, I'm going on a road trip. A nice long 5 hour road trip. On the busiest travel day of the year.

protests&pies. part 2. 

 What better way to fuel up before a social hour with 5,000 people than with a pie...a pumpkin protest pie.

I'm not a big pie lover but I have wanting to try to make my own for a sometime (aka: actually wanting to contribute something edible to Thanksgiving Dinner...) When I found a recipe in this cookbook, I made it BUT added chocolate! It was delicious, my testers didn't even know it was vegan! 

Here's how the night panned out...

1. Preheat the oven to 350 degrees. Take your pre-made/store bought pie crust (also vegan) and cover the bottom with dark chocolate chips. Set aside.

2. Combine all ingredient's in a food processor until very smooth. 

-15 ounces lite silken tofu -1 16oz can solid-pack pumpkin -2/3 honey -1 teaspoon vanilla -1 teaspoon ground cinnamon -1 teaspoon pumpkin pie spice -1/2 teaspoon ground ginger -1/4 teaspoon ground cloves 

Pour into pie crust.

3. Recipe suggests to bake for 1 hour (but I found this time will vary.) 

4. Chill for 2 hours and eat...vanilla ice cream is optional :) 

5. Prepare for protest (or social hour) with friends and beanies to face the cold.

6. Live life, see what all the hype is about.

{vegan} black bean pizza

Black Bean Pizza: protein packed, healthy, quick, delicious, and simple!

What more could you ask for?

So good, I made it twice in 3 days. 

{Ingredients} 

3/4 cup tomato sauce, 1/2 teaspoon ground cumin, 1/2 teaspoon garlic powder, 1/2 teaspoon thyme, 1 large pizza crust (I just used a pre-made/whole wheat one from the bread aisle), 1 can black beans (drained), 1 cup frozen corn kernels (thawed), 1 onion chopped (optional), 1/2 cup salsa

{Steps} 

Preheat the oven to 450 degrees. 

Combine the tomato sauce, cumin, garlic powder, and thyme. Spread over the pizza crust. Combine the black beans, corn, onions, and salsa. Spoon evenly over the pizza crust on top of the tomato sauce. Bake for 10 to 12 minutes, until the crust in golden. YUM!

chocolate crackle cookies

 Also known as...

Mexican Hot Chocolate Cookies

Kinda like Mexican food (which I love) combined with baking (which I love.)

For some reason I had a "calling" to try these suckers out. Thank goodness for callings, because they made a bad day wayyy better. Even the guy at the checkout line knew what I was making. No joke, he basically followed me to my car raving about chocolate spice cookies. 

Long story short, the stranger wasn't danger, he was right...These suckas are ahhmaze. 

{Supplies} 

Oven, big bowl, small bowl, plate, cookie trays, mixer and/or mixing spoon, parchment paper (optional) 

{Ingredients} 

1/3 cup cane sugar, set aside

1 2/3 cup all purpose flour

1 cup cane sugar

1/2 cup unsweetened cocoa powder

1/3 cup dark chocolate chips

1 teaspoon baking soda

1/2 teaspoon cinnamon

1/4 teaspoon cayenne pepper

1/4 teaspoon sea salt

1/2 cup vegetable oil

1/4 cup pure maple syrup

5 tablespoons non dairy milk of choice

1 teaspoon natural vanilla extract

{Steps} 

Preheat the oven to 350 F.

Spread the 1/3 cup sugar evenly on a flat plate.

In a medium mixing bowl, mix the flour, cane sugar, cocoa powder, chocolate chips, baking soda, cinnamon, cayenne and salt.

In another smaller bowl, mix the oil, maple syrup, milk, and vanilla. Add the wet ingredients to the dry and mix thoroughly.

Take small pieces of the dough and roll into approximately 1" balls. Press into the plate with the sugar and flatten slightly until they are 2" wide. Place on a lightly greased (or use parchment paper) baking sheet sugar side up. Make sure cookies have a few inches between them, they will spread.

Bake for 11 or 12 minutes.  Remove from oven and let cool for a few minutes before transferring to a cooling rack.

Ps: These were made in attempt to avoid studying, which I realized, can't really be avoided, just postponed, which is even worse than avoiding in the first place.
